Pasta with Chicken Liver (Pasta al Fegatini)

Mention organ meat such as liver, intestines, hooves, nose and heart and you might get some interesting reactions from the crowd. Ranging from intrigue to disgust. Offals as they are known, are given a bad reputation and are thrown away or fed to animals as feed. But eating offals can offer many benefits. They are much more affordable then meat, contain a much higher nutrient density; offering almost 200% more iron per serving of liver than in meat and bring to your dish another layer of flavour complexity.
